Zucchini Chocolate Cake With Cream Cheese Frosting

Chances are you will receive one or two zucchini squash from your gardening friends or neighbors about now. I am not a spice cake fan, but I have a recipe from one of my coworkers for chocolate zucchini cake that is WONDERFUL!


I made it at home on Thursday, and my family loved it too.

Here is the recipe:

Mix:
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1/4 cup cocoa

Beat:
3 eggs
2 cups sugar
1/2 cup oil

Add:
3/4 cup buttermilk
2 cups shredded zucchini
1 cup walnuts (optional)
1 tsp vanilla
1 tsp grated orange peel

Bake at 350 degrees for 40-45 minutes in two layer pans or a sheet cake pan.

Frost with Cream Cheese Frosting.

Cream Cheese Frosting:

Beat with hand mixer:
6 oz cream cheese, softened
3/4 stick butter or margarine, softened
1 tsp vanilla
4 cups powdered sugar


I served my chocolate zucchini cake with vanilla ice cream. I didn't add the walnuts, and I used a sheet cake pan.
